Levain Chocolate Chip Cookies
Ingredients
- 230g cake flour
- 275g all-purpose flour
- 280g unsalted butter (1.25 cups)
- 285g light brown sugar
- 115g granulated sugar
- 2 large eggs
- 3 large egg yolks
- 450g dark chocolate (60-70% cacao), chopped
- 165g walnuts, toasted and chopped
- 5g kosher salt
- 8g cornstarch
- 6g baking soda
Instructions
- In a medium saucepan, melt the butter and set aside to cool
- In a medium bowl, whisk together flours, salt, cornstarch, and baking soda. Set aside
- Using a stand mixer with whisk attachment, add light brown sugar and granulated sugar. Whisk on medium speed until combined
- Slowly stream in the melted butter. Continue to whisk until mixture is creamy
- Add eggs one at a time, then egg yolks, mixing each fully before adding the next
- Once smooth, switch to paddle attachment and mix in flour mixture until smooth
- Turn off machine and fold in walnuts and chocolate until combined
- Place batter in bowl, cover, and refrigerate for at least 45 minutes to chill completely
- Preheat oven to 425°F (220°C)
- Divide dough into 6oz pieces. Roll each into tightly packed ball (should be tall). Place 4 cookies per parchment-lined baking sheet
- For best results, refrigerate cookies again for 25 minutes
- Bake 10-13 minutes until lightly browned outside and slightly underdone inside
- Set on wire rack to cool slightly before serving
French Apple Cake
Ingredients
- 3 large baking apples (such as Honeycrisp)
- 2 tsp apple cider vinegar
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp kosher salt
- 1 stick unsalted butter, at room temperature
- 1/2 cup white sugar
- 2 tbsp light brown sugar
- 2 large eggs
- 3 tbsp dark rum
- 1/2 tsp vanilla extract
- 3 tbsp white sugar for the top
- 1 tbsp powdered sugar for dusting (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease 9-inch round cake pan with butter and line bottom with parchment paper
- Peel (or leave skin on) and core apples; cut into cubes between 1/4 and 3/8-inch in size. A little smaller is okay, but larger cubes won't get tender enough. Toss with apple cider vinegar
- Mix flour, baking powder, and salt in a small bowl
- Beat butter, 1/2 cup white sugar, and brown sugar with electric mixer until light and fluffy
- Beat in 1 egg on high speed until fully incorporated and smooth. Add second egg and repeat
- Mix in rum, vanilla extract, and half the flour mixture. When flour disappears, add rest and fold with spatula
- Fold in apples until evenly mixed. Transfer to prepared pan, pressing firmly. Smooth top and dust with remaining 3 tbsp sugar
- Bake 45 minutes until skewer inserted into center comes out clean
- Cool in pan 30 minutes. Invert onto wire rack, place serving plate on top, flip back over. Dust with powdered sugar and serve

Tomatillo Lime Ranch
Ingredients
- 1 oz (1 packet) Hidden Valley Ranch mix
- 1 cup buttermilk
- 1 cup mayonnaise
- 1-2 tomatillos, husked
- 1 clove garlic
- 1/2 bunch cilantro
- 1/2 tsp lime juice
- 1/2-1 small jalapeño, seeded

- Blend all ingredients until smooth
